Zucchini Roll Up Hors d’Ouevre

So this recipe probably belongs somewhere more on Sandra Lee’s Semi-Homemade because it’s so unbelievably simple. Yet, these zucchini roll up bites have a classic look and a great flavor that works great as an hors d’ouevre or canape at parties. I like to make these because they only take a few minutes and other than the seasonings, just take 2 ingredients. A Zucchini, and Laughing Cow Cheese Cubes.
I enjoy recipes like these because they’re things I create when trying to use up extra ingredients, and surprisingly they become a hit. People would eat these things up faster than some of my other favorite recipes like my Pear and Blue Cheese tartlets, or my Salmon Mousse Cups.

The only tool you’ll need for these is a large sheet pan (or just a lot of plates), some toothpicks, and a vegetable peeler. Usually all kitchen tools you already have on hand.
Zucchini Roll Up Ingredients
1 large Zucchini
1 box Laughing Cow Cheese; can be original flavor, or any flavor you want.
Olive Oil
Salt
Pepper
Instructions
1. Begin by preparing your sheet pan. Sprinkle some salt and a drizzle of olive oil on the pan.
2. Take your vegetable peeler and just start peeling down the length of the zucchini. When making the zucchini roll up, you’ll want long wide sheets as this makes it the easiest.

3. Lay your zucchini peeled sheets on the sheet pan. Do not stack them. When the pan is full, sprinkle some more salt and olive oil. Don’t use too much salt, as the zucchini will absorb it quite easily, just a pinch to bring out the flavor.
4. Take a cube of Laughing Cow cheese and place it about an inch from one end. Roll the zucchini sheet all the way to the end, and then take a toothpick to stab it shut. Plate, and season with some freshly cracked black pepper.
