When it’s zucchini season, it’s ZUCCHINI season. There’s a reason that ‘zucchini recipes’ are so prevalent – these vegetables grow like weeds! Of course there’s the popular recipes like zucchini bread or spiralized zucchini for pasta, but these zucchini fritters are my personal favorite way to use up this abundant vegetable.

If I feel like being lazy I’ll make something like my pork and chanterelle zucchini boats, but if I want a nice fried fritter, then this is the recipe to make.

This is a super easy recipe because the ingredients are kitchen staples. In fact, if you already have the zucchini, chances are you already have everything else!

  • 3 Zucchini – shredded
  • 2 large Eggs
  • 5 tbsp Flour – if the batter looks too runny before frying don’t be afraid to add more flour.
  • 2 tsp Garlic Powder
  • 1 tsp Salt
  • Black Pepper – to taste
  • Oil – for frying

The Best Homemade Zucchini Fritters

For this recipe I am using magda zucchini, also known as a Lebanese zucchini. I find this variety to have a very rich and nutty flavor, and that makes it an excellent fritter.

Using the large holes section of your grater, shred the zucchini into a bowl. If it makes it easier you can slice them in half before grating. When you are done, sprinkle the salt and let sit for 10 minutes. Then squeeze out a lot of the water.

After you have squeezed out the water you can add the two eggs. Just mix them in with a fork until combined.

Next mix in the garlic powder, flour, and black pepper. Combine with a fork. If the batter looks too runny feel free to add another tablespoon or two of flour to thicken it up.

Lastly heat up a pan with oil to medium-high heat. Scoop about a tablespoon of batter right into the oil and press down slightly to shape the fritters into circles. Flip them after about a minute, or when golden brown. When completely done, move them to a paper towel lined plate and sprinkle with a pinch more salt.

I like to drizzle them with a bit of my yogurt tahini sauce, but that’s entirely optional. You can use sour cream, hot sauce, or whatever you feel like!

Instructions
 

  • Use the large wholes of a grater to shred all the zucchini into a bowl. Add the salt and let sit for about 10 minutes.
  • Squeeze the excess liquid out of the zucchini and put in a clean bowl. Add the eggs and mix them in with a fork, then add the rest of the ingredients except the oil and mix them in.
  • Set a pan with oil on medium-high heat. Scoop about a heaped tablespoon of zucchini fritter batter into the oil and smooth out into a circular shape. Fry about a minute per side, or until the fritter is golden brown (see pics for reference). Remove and place on a paper towel lined plate.
  • Serve with sour cream or hot sauce, or any topping you prefer!
