Cucumber Radish Salad With Creamy Dill Dressing

This fresh summer salad uses crisp cucumbers and radishes and is tossed in a light and tangy creamy dill dressing

  • 6 Persian Cucumbers or 1-2 English cucumbers, peeled and cut into rounds
  • 12 Radishes more or less depending on the sizes, thinly sliced
  • 1 cup Mayonnaise store bought or homemade
  • 3 tbsp Buttermilk or Kefir if you can find it
  • 1 bunch Dill fresh
  • 1 tsp Hot Mustard
  • 2 tsp Black Pepper freshly cracked
  • 4 cloves Garlic minced
  • 1 pinch Salt to taste


  • Make the dressing by combining all the ingredients (except the cucumber and radish) in a bowl. Mix together with a fork or whisk. You can add more buttermilk if you want to thin it out some more. I suggest adding the buttermilk one tbsp at a time in case you want it thicker than I like it.
  • In a bowl place the cucumber and radish rounds and then drizzle over some of the creamy dill dressing. Give everything a good toss. Sprinkle on some more fresh dill for show and serve!


This salad holds great for a few days as the hard vegetables do not wilt. Just make sure to keep covered and store in the fridge.
