These sausage and red pesto tacos are a fun and unique take on traditional street tacos. Using red pesto gouda really kicks them up a notch.

In a pan on medium high heat add the oil and red onion. Once the onion begins to soften add in the crumbled sausage and the spices (cayenne chili, red chili flakes, black pepper, paprika, salt). Cook until the sausage is browned, stirring every so often.
Soften your tortillas by placing them right on top of the fire for 4-5 seconds per side. Into the tortillas add the sausage mixture, top with the cheese, and then a dollop of guacamole. You can garnish with lime wedges or cilantro since some people may like to eat them.
Eat this right away. The mixture will store just fine in the fridge for a few days, but the tortillas will dry out once they are opened, so best eat them right away.
