Simple Salmon Poke

A simple Salmon Poke perfect for serving guests at lunch. This dish can be easily scaled to accommodate any number of guests.

Ingredients

  • 250 Grams Salmon
  • 1 Large Avocado
  • 375 Grams White Rice
  • 1 Sheet Nori Seaweed (Optional)
  • 45 ml Soy Sauce
  • 15 ml Ponzu
  • 15 Grams Garlic Powder
  • 30 ml Rice Vinegar
  • A Few Shakes Trader Joe's Everything Bagel Seasoning

Instructions

  • In a large pot put 375 grams of rinsed White Rice with 750 ml of water. Give it one good stir turn the stove on. Put the lid on the pot and bring to a boil. The rice should be cooked in about 15 minutes.
  • Chop up the salmon into small chunks and put in a large bowl.
  • Add the Soy Sauce, Ponzu, and Garlic Powder. Let marinate.
  • When the rice is done, add the vinegar, lightly stir, then spread on a sheetpan to quickly cool.
  • While the rice is cooling, split the avocado into two halves, and thinly slice it.
  • In four separate bowls, add each a quarter of the cooled rice, marinated salmon, and avocado. Sprinkle with Trader Joe's Everything Bagel Seasoning and garnish with a square or two of Nori Seaweed.

Notes

While this is in no way a traditional Hawaiian poke, it is my modern take on it, and what is cooking if not an ever changing art. Traditional Hawaiian Poke is simply diced raw fish or octopus, soy sauce, onions, nuts, and sesame oil.
