Golden Watermelon and Feta Salad

If you haven’t had a golden watermelon before, this salad is the perfect opportunity to try one. Not as common as red watermelon, the golden variety is firmer, sweeter, and overall better in my opinion.

I find that in this salad in particular, the sweet golden watermelon pairs perfectly with the tangy flavors of the Feta Cheese, which, along with a Dijon Vinaigrette makes an amazing Summer Salad.

I serve this on Arugula, but any salad green you want will be fine. If you want the bowl in the picture, it is the Steelite Craft Freestyle Bowl available here.

What You’ll Need:

Salad Ingredients:

75 grams of Arugula (aka Rocket)

2 cups Golden Watermelon; cubed

125 grams Feta Cheese

Dijon Vinaigrette:

1/4 cup Good Extra Virgin Olive Oil

1 tsp Dijon Mustard (I use Maille, but you can use whatever brand you prefer)

1 tsp Lemon Juice

Pinch of Coarse Sea Salt

Pinch of Fresh Cracked Black Pepper

Golden Watermelon and Feta Instructions:

1. As you can pre-make the vinaigrette, I just toss all the ingredients into a shaker bottle and shake it up right before I pour it on salad. Due to it’s contents, it can be stored for a few weeks in your fridge and used on multiple salads. In this regard I would suggest scaling up the recipe to make more than just this one serving.

2. For the Salad: In a bowl, place the Arugula, Watermelon Cubes, and chunks or cubes of the Feta Cheese. Drizzle with the dressing and toss. Sprinkle with a pinch of some Coarse Sea Salt and serve.

Note:

This salad would also be perfectly fine with a standard red watermelon, and you can even change out the cheese if you don’t like Feta. I feel like the flavor palate should have a tangy side, but as the Dijon Vinaigrette already has lemon juice, you can choose a less strong cheese. Something like Halloumi would be a good substitute.
