
Salads are one of my favorite things to make since they are essentially a blank canvas allowing your creativity to flow. You can pretty much do whatever you like (within reason) and it will probably be pretty good. One of my favorite things is sprucing up your salad with a bit of meat. Whether that be grilled chicken on a classic caesar, or some Peppercorn Crusted Ahi Tuna atop a bed of arugula. This warm veal salad uses, you’ve guessed it, Veal! This could be a great way to get rid of some of the last bits of meat you have after making steaks or other dishes, and is a little healthier than just tossing it all into a pot and making a stew.

This warm veal salad is nothing too complicated. Some salad greens as the base and sliced pieces of veal as the most complicated part make this an easy dish to make. Add some sliced red bell pepper and cherry tomatoes and you’ve got a great salad ready for a top notch dressing. In this case, the dressing is a Mustard Vinaigrette.
All in all this salad takes less than 15 minutes to make and is great to serve as a starter course for a nice dinner party. You can leave out the veal and make it vegetarian, or leave out the veal and parmesan to make it vegan.
Warm Veal Salad Ingredients
200 grams Veal+ Salt and Pepper to season
150 grams Mix Salad
1 Red Bell Pepper; sliced
15-20 Cherry Tomatoes
1 tbsp Dijon Mustard
1 tsp Lemon Juice
120 ml Olive Oil
1 tsp Salt
1 tsp Cracked Black Pepper
Parmesan; to taste
Warm Veal Salad Instructions
1. As this is a warm veal salad we shall start with the veal so that as we build the rest of the salad, the veal can go from hot to warm while it rests. Season the piece of meat liberally with salt and pepper and place in a hot pan to sear. If the piece is about an inch thick, you will want to do it for 2 minutes on the first side, and one minute on the second for a nice sear like in the picture. Let rest while you compose the dressing and rest of the salad.
2. In a large wooden bowl, add the mustard, lemon juice, olive oil, salt and pepper, and whisk together. Add the mixed salad, cherry tomatoes, and red bell pepper and toss the salad to get the dressing everywhere.
3. Slice the veal to about half cm (quarter inch) slices, place atop the salad and season with grated parmesan cheese to taste.
