The clover club has to be one of my all time favorite cocktails, and for good reason. It is a pre-prohibition classic cocktail that has stood the test of time. In fact, it continuously makes cocktail best of lists, owing to the perfect balance of sweet and sour. This strawberry clover club is a simple riff on the original which replaces the raspberry syrup with tart and tasty strawberry syrup.
If the first thing you thought after seeing the picture is there’s no way that color is natural you’d be mistaken. With freshly picked strawberries you really do get a neon pink syrup that really makes this cocktail pop. Although I do have to admit I did up the contrast of the picture in lightroom.
To make the strawberry syrup I definitely recommend picking strawberries at a farm. I know it’s a lot of work, but as anyone who has tasted freshly picked strawberries will tell you, there is a night and day difference between farm fresh and grocery store bleh strawberries.
The strawberry syrup is simple; just muddle a cup of strawberries with a cup of sugar and let sit for at least 2 hours in the fridge. It’s that simple. When you open the fridge again you’ll be met with a thick glob-like paste that is a rich bright red. Simply strain the liquid from the solids and voila…your own homemade strawberry bar syrup.

How To Make The Strawberry Clover Club
Ingredients
- 45 ml Gin. London Dry.
- 15 ml Strawberry Syrup. Homemade.
- 15 ml Lemon Juice. Freshly squeezed.
- 1 Egg White
Add all ingredients to a cocktail shaker and give a hard shake for a few seconds to emulsify the egg white. Add ice to the shaker and shake hard for 30 seconds. Double strain into a cocktail glass. The cocktail glass featured in the images is a coupe by Libby, which I think makes these types of cocktails look quite stunning.

Ingredients
- 45 ml Gin London Dry
- 15 ml Strawberry Syrup homemade
- 15 ml Lemon Juice Freshly squeezed
- 1 Egg White
Instructions
- Add all the ingredients to a cocktail shaker and give a good shake for a few seconds to emulsify the egg white.Add ice and hard shake for at least 30 seconds to develop the foamy head.
- Double Strain into a cocktail glass. Garnish with some skewered raspberries, dried citrus, or leave un-garnished
