
Pad See Ew might just be the most popular Thai recipe in the entire country. Yes, even more than Pad Thai. The dish is simply soy sauce fried noodles, of which in Asia there are hundreds of variations. My way of making it is about 95% authentic, I only swap the Chinese Broccoli for sliced spring onion because that’s what I prefer.
I have been to Thailand a dozen or so times, and Alona and I even have property there. So, I like to think I know what I’m talking about. However, as Pad See Ew is a homestyle or street-food dish, there are plenty of variations.
Pad See Ew Sauce

The sauce for pad see ew is simple in my recipe, it’s actually an equal parts mix. For two portions of noodles (200 grams) the sauce recipe is: 1 tbsp each of dark soy sauce, light soy sauce, oyster sauce, white sugar, and rice wine vinegar.

The rest of the ingredients are simple. As seen in the picture above I use 4 cloves of garlic, thinly sliced, two beaten eggs, one chicken breast cut into small strips, the sauce, and some thinly sliced spring onion. If you want this to be 100% authentic, use Chinese Broccoli or Kale instead of the spring onion. Finally 200 grams of very wide rice noodles that have softened in cold water.
How To Make Thai Soy Sauce Fried Noodles

The best thing about pad see ew is that after prep the entirety of the dish is can be made in one pan. Turn heat on high and add a bit of oil. Then add the garlic and chicken strips and toss everything around.

Once all the chicken is completely white on the outside you can add the spring onion (or Chinese broccoli if you are using that). Just stir everything for half a minute or so, just to fry the onion slightly.

Push the contents of the pan to one side and pour in the two beaten eggs. In Thailand they usually just crack the eggs directly into the pan and then start mixing everything, but I like to beat them first. Just stir the eggs until you get soft curds and then toss the entire pan so the scrambled egg mixes with the chicken and onion.

Tip the chicken and egg onto a plate and set aside. Add the sauce to the pan (no need to use a new pan or clean it) and then add in the noodles. Give everything a good mix and let the noodles fry in the sauce for about 45 seconds. Add back the chicken and egg and toss the pan around so everything is evenly mixed.

And there you have it. A delicious Thai street food in the comfort of your own home. And like most recipes, feel free to change up the dish to suit your needs. If you find it too salty you can reduce the soy sauce or add more vinegar or sugar. If you don’t like egg you can sub with tofu. Have fun and enjoy!

Soy Sauce Fried Noodles (Pad See Ew)

Ingredients
- 200 grams Rice Noodles softened in cold water, or according to the package instructions. Try to find noodles as wide as possible to keep it authentic
- 2 large Eggs beaten
- 1 Chicken Breast cut into thin strips
- 1 bunch Spring Onion sliced lengthways. Sub for Chinese Broccoli to keep it authentic.
- 4 cloves Garlic thinly sliced
- Vegetable Oil for frying
Pad See Ew Sauce (mix together)
- 1 tbsp Dark Soy Sauce
- 1 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
- 1 tbsp Rice Wine Vinegar
- 1 tbsp Sugar granulated
Instructions
- In a pan add a little vegetable oil and turn the heat on high. Add the garlic and chicken and begin to saute.
- Once the chicken is completely white add in the spring onion and stir for 30 seconds or so.
- Push everything to the side of the pan and pour in the egg. Scramble it with a spoon and then toss the pan to combine the scrambled eggs with the chicken and onion. Tip contents of pan onto a plate and set aside.
- Add the pad see ew sauce to the pan (no need to clean the pan or use a new one) and then the noodles. Give everything a stir and toss the pan for a minute to let the noodles fry in the sauce and caramelize slightly.
- Add the chicken and egg mix to the noodles, toss everything to combine, then serve. Enjoy!
