
Pineapple Mango Sauce is a sweet and tangy dipping sauce perfect for seafood. It pairs very well with shrimp dishes like my Shrimp Puffs and my Pineapple Mango Shrimp. It can also be used as a glaze for salmon or other baked fish, or as a coating for fried chicken bites, like Panda Express’ Orange Chicken (but better!).
While you can definitely just buy a sauce like this at the grocery, or online, something about making it at home just makes it taste so much better. And, it really doesn’t even take that much time. It can be whipped up in less than 30 minutes, and stored in the fridge for up to two weeks.
Pineapple Mango Sauce Ingredients:
- 1/4 cup Sugar
- 1/4 cup Pineapple Juice
- 1/4 cup Fresh Mango; pureed
- 1 tsp Tapioca Starch; potato starch will work, as will cornstarch.
- 1 tsp Chili Powder
- 1 tsp Lemon Juice
- 1 cup Water
Instructions:
1. In a saucepan on medium heat, combine the Sugar, Water, Pineapple Juice, Pureed Mango, Chili Powder, and Lemon Juice. Stir to combine everything. When it starts to simmer add the tapioca (or potato or corn) starch and continue to stir.
2. As it reduces it will start to thicken. If it is too thick, add some more pineapple juice, or a bit of water until your desired consistency. If it is too thin, add the starch, using just a little at a time. Once it is the perfect consistency, remove from the heat and place in a resealable airtight container and place in the fridge.
Notes:
You can make this sauce as spicy as you want it, just add some drops of your favorite hot sauce, or some fresh minced chili peppers to the sauce in step 1. Red Pepper flakes can also give it a bit more color to contrast from the pretty homogeneous yellow-orange.
