One of the best things about new potatoes (aka young potatoes) is how the outside gets wonderfully crispy while the inside is soft and tender. These parmesan crusted new potatoes are one of my favorite things about the early potato harvest. And the best part is there are only a few ingredients needed for the entire recipe.

This is probably my favorite recipe for parmesan crusted new potatoes because it is just so easy. Not to mention 90% of the actual effort is just microplaning the cheese. If you are fortunate to live in a place where you can buy prepped young/new potatoes then the actual prep for this recipe takes but a couple minutes.
This tasty potato recipe makes a great side dish for classic meat dishes like steaks or chops. I’m a big fan of making these parmesan potatoes when I don’t want to go through the effort of fancy whipped potatoes or things of that caliber.
What Are New Potatoes
New potatoes refer to young potatoes that are harvested before they reach maturity. These potatoes are typically dug up early in the growing season, usually in late spring or early summer, before their sugars have converted fully to starch. As a result, new potatoes have a thin, delicate skin and a moist, waxy texture. They are known for their tender flesh and sweet flavor. New potatoes are often enjoyed boiled, steamed, or roasted, and their smaller size makes them a popular choice for salads and other dishes where a firmer texture is desired.
These are different than fully matured small potatoes like what are used in this papas criollas recipe – as those are naturally tiny. New potatoes are just a baby version of regular sized potatoes.
How To Make These Parmesan Crusted New Potatoes

There are only five ingredients needed for these roasted parmesan potatoes. And because there are so few ingredients, I recommend getting higher quality ones if possible. To be honest though, the only real quality ingredient you need are the potatoes themselves, and the cheese. The oil, pepper, and seasoning blend are going to be baked so you can cheap out a little there.
Parmesan Potatoes Ingredients
- 500 grams New Potatoes – If you can buy them vacuum sealed and peeled then it will save you a ton of time. Otherwise just give them a quick peel yourself. The skins are super thin and easy to remove.
- 60 ml Olive Oil (1/4 cup)
- 2 tbsp Italian Seasoning – This is a blend of pre-packaged seasoning including dried basil, oregano, parsley, and thyme. You can use your own blend, or your own store-bought version. Adjust quantity as needed.
- Black Pepper – Freshly cracked, to taste
- Parmigiano Reggiano – Grated. I highly suggest grating it yourself and using a microplane. This is my favorite parmesan tool and creates very thin, easily meltable strips of cheese perfect for these parmesan potatoes.
Baked Potato Recipe Instructions

Place your new potatoes in a large metal bowl. Add the oil, black pepper, and the Italian seasoning blend. Spread the potatoes out on a baking tray and place in the oven at 200C or 400F for 25 minutes, or until golden brown going on a bit darker.

Once the potatoes are almost finished baking, open the oven and sprinkle over plenty of the grated parmesan cheese. Close the oven and let the cheese crust over the potatoes for about 5 minutes. Then remove the potatoes from the tray and place into a serving or chafing dish. Sprinkle over some more parmesan cheese and serve.

Ingredients

Instructions
- Preheat your oven to 200C or 400F.
- Place the peeled potatoes into a large bowl and add the olive oil, black pepper, and Italian seasoning. Toss to coat.
- Spread out the potatoes on a baking tray and bake for 25 minutes. Open the oven and sprinkle over plenty of the cheese, then bake for another 5 minutes.
- Remove to a serving tray and sprinkle over more parmesan cheese. Enjoy!
