Mango Guacamole

tropical mango guacamole

Just three days ago I posted a recipe for Spicy Chorizo Guacamole and I figured why not make another fusion guacamole. I had some mango and figured what would bring some tropical essence to a standard bowl of guac. Well, the result is just a simple mango guacamole, another one ingredient alteration of my Traditional Guacamole.

Luckily good quality avocados are quite cheap here in Ukraine, coming in at about $4-$6 a kilo depending if there is a sale or not. Avocados aren’t ubiquitous in Ukrainian cuisine so more often than not the store marks them down so I can buy them perfectly ripe for cheap.

Actually, the inspiration for this recipe was just using up leftovers. I mentioned I had avocados which were leftover from the spicy chorizo guacamole, and the mango was because of my Mango Coconut Ceviche!

I made this mango guacamole for St. Paddy’s Day because we were having a bit of a Corona-Quarantine party. That meant green coronas and Mexican food. After all, traditional Irish food does not make good party snacks.

If you’re read this far I commend you, but I’m not really going to say anything of value. I mean, the recipe is just regular guacamole with half a chopped up mango. I just need to get to my word minimum so Google recognizes this recipe as “valuable” thanks to their SEO algorithm. I know, I know, we all find it annoying reading about a food bloggers life story. I don’t particularly like writing so much for simple recipes either.

Well looks like I just have a paragraph left. If you’re read this far, why not tell me in the comments what your favorite guacamole additions are. Mango guacamole is pretty simple, but maybe you like something weird like teriyaki chicken guacamole. Who knows. I’m done!

  • 2 tbsp Cilantro chopped

  • 2 tsp Salt or to taste
  • 2 tsp Black Pepper or to taste
  • 1/2 Mango diced

Instructions

  • Put all the ingredients except the mango in a bowl or mortar and mash everything up with two forks or a pestle respectively.
  • Add the chopped mango and mix everything up. Serve with corn tortilla chips.

Notes

Guacamole doesn’t hold well for that long as it develops a brown color. The taste is the same, but some people are put off by the appearance. Just keep it in an airtight bowl in the fridge if you want to save it. Even more, you can press down plastic wrap directly on the surface.
