The NY Scramble (Lox Scrambled Eggs) is one of my favorite breakfast dishes to make. It is quick and simple with just a few ingredients, but can be scaled up to serve any number of people. It is a tasty dish and a nice change from a fried egg with toast if you have guests.

At it’s base, it is just scrambled eggs, mixed with chopped up Lox (Smoked Salmon) and some cream cheese. I like to plate it in my RAW Northern Green Serving Dish, produced by Aida. This is a Danish brand I’m a big fan of. Unfortunately it isn’t available on Amazon, but it may be possible to order directly from their site here.

The NY Scramble Ingredients:

  • 4 Large Eggs
  • 100 grams Smoked Salmon
  • 100 grams Philadelphia Cream Cheese
  • 1 tbsp Butter
  • Pinch of Salt
  • Cracked Black Pepper; to taste
  • Sprinkle of Paprika on top.

Scrambled Eggs Instructions:

1. In a large mixing bowl, crack the 4 eggs making sure not to get in any shells. Add cracked black pepper and whisk the eggs.

2. Chop up some Smoked Salmon into small pieces and the Cream Cheese into small chunks and add to the eggs. Whisk lightly to combine.

3. In a hot skillet, add the butter, and once melted pour in the egg mixture. Let cook without touching it for about 20 seconds, then take a rubber spatula and start scraping the edges towards the center. You want to be careful not to actually cook the salmon, so this whole cooking process should take less than a minute. When it is just about done add a light sprinkling of salt, give it a few more mixes with the rubber spatula, and your scrambled eggs are done.

4. Place into a serving dish, sprinkle with paprika, and garnish with some baby greens if you want.

Note:

I’ve called this a NY Scramble for as long as I can remember, since it reminds me of the classic New York Lox and Bagel. However at its root it is just Scrambled Eggs with Lox and Cream Cheese, so if you’re serving to people at a breakfast/brunch, it may be easier to name it based on it’s ingredients so everyone knows what’s in it.
