Linguini Pasta with Grilled Chicken
Chicken Linguini

This is one of the perfectly simple weeknight pasta dishes that can be enjoyed by almost anybody (leave out the chicken for vegetarians). It is a standard pasta with tomato sauce, with the addition of some fresh vegetables and sliced grilled chicken. This linguini pasta dish can be whipped up quickly and made in bulk to serve a family.

Linguini pasta is a similar pasta to trenette or fettuccini. It takes the flat noodle attribute of fettuccini, and is about the same width of trenette except it is less flat and more elliptical in shape.

This recipe is for 4 people, but of course when you make this dish at home, you can scale up or down for your needs and you can use any noodle variety you want.

Linguini Pasta With Chicken Ingredients

2 breasts Chicken

1/2 tsp each Paprika, Salt, Pepper, Cumin

500 grams linguini pasta; trenette or fettuccini are also fine

450 grams Canned Tomatoes; whole

2 tbsp Tomato Paste

2 cloves Garlic; minced

1 tsp Salt

1 tsp Basil; chopped

Cherry Tomatoes; garnish

Parsley; garnish

Sauteed Asparagus; garnish

Instructions

1. In a saucepan on medium heat add the canned whole tomatoes with the teaspoon of salt and bring to temperature. Crush the tomatoes with a fork and add the tomato paste, chopped basil and minced garlic, add a bay leaf and let simmer and reduce.

2. Season both of the chicken breasts with the seasoning mixture of salt, pepper, paprika, and cumin. Saute in another pan on medium-high heat until cooked through, about 5 minutes on the first side, and 3 minutes on the second. Let rest when cooked while you do step 3.

3. In a pot of properly salted boiling water add the linguini pasta and boil for 7 minutes for al dente. When cooked, take a tablespoon or two of the pasta water and add it to the simmering sauce. Strain the linguini pasta and add to the sauce. Toss to coat.

4. Plate the pasta in a bowl or plate and top with some of the sliced chicken. Garnish with sliced fresh cherry tomatoes, and parsley.
