Vinaigrettes are one of the more healthy salad dressings, and a great way to bring even more freshness to a vegetable salad. Citrus (and for me, blackcurrants) is a popular addition so when I saw these delicious ruby red grapefruits at the market I just had to make a tasty grapefruit vinaigrette for my salad.
The best thing about a vinaigrette salad dressing is how easy it is to customize. You can leave out, change, or add new ingredients that you want and chances are it’ll still taste pretty great. Of course, with this recipe I wanted to showcase the tart freshness of the grapefruit since it was going on a simple avocado tomato salad.
Easy Homemade Grapefruit Vinaigrette
The ingredients in this grapefruit vinaigrette salad dressing are fairly simple and things you’re likely to have already in your pantry. The one thing you may not is the sunflower lecithin powder, but that is entirely optional.
Ingredients
- 1/2 cup (120ml) Grapefruit Juice – freshly squeezed
- 1/4 cup (60ml) Olive Oil – extra virgin, high quality
- 3 tbsp (45 ml) White Wine Vinegar
- 1 tsp Dry Oregano
- 1 tsp Dry Basil
- 1/2 tsp Garlic Powder – can also substitute in one minced clove of fresh garlic
- 1/2 tsp Salt – or adjust to taste
- 1 tbsp Sunflower Lecithin Powder – optional. This will help emulsify the salad dressing so you do not need to shake it every time you want to use it.
Add all of the ingredients to a bowl and whisk together until combined. If you are using the sunflower lecithin powder then you will have to whisk longer, until the entire mixture becomes foamy.
Along with the aforementioned avocado tomato salad, I’ve also used this salad dressing on a delicious roquefort and candied walnut salad.
