Cilantro Lime Quinoa

Quinoa has seen a surge in popularity in the past decade. It is considered a healthy alternative to many traditional high carb starches or grains so you will often see it paired with things like fish and chicken. This delicious cilantro lime quinoa recipe is a lower carb alternative to the standard rice version – but it is still absolutely tasty.

Cilantro Lime Quinoa

Quinoa is actually pretty easy to make. It is a grain that can be cooked just like rice. This recipe uses a ratio of 2:1 liquid to dry quinoa. Here’s the kicker though; instead of using regular water like most recipes call for, I’m using chicken stock.

While quinoa has only recently been introduced to modern cuisine, it has actually been a staple grain in South America for millennia (seriously, humans were harvesting it in Peru and Bolivia over 4000 years ago – and even earlier as a livestock feed crop)!

How To Make Quinoa

There are really only two steps to making quinoa. Boil water, and add the quinoa. For this recipe I’m just doing 2 cups of chicken stock and one cup on quinoa.

In a pot boil the chicken stock (or water if you want to keep it extra simple). Once boiling add in the dry quinoa grains and give a stir. Turn the heat down to low, place on the lid, and let cook for 15-20 minutes. If your quinoa is too wet you can take off the lid to help some of the water evaporate. I quite like my quinoa “wet” though as it makes a better base for bowls in my opinion.

Chop up a couple tablespoons of fresh cilantro. Once the quinoa is done, add the cilantro and the juice of one lime. Give the cilantro lime quinoa a good mix and you’re ready to serve!

Ingredients
  

  • 1 cup Quinoa dry
  • 2 cups Chicken Stock wet
  • 2 tbsp Cilantro fresh, chopped
  • 1 tbsp Lime Juice more or less, about one whole lime
  • Salt to taste (if your chicken stock has salt in it you may not want to add more).

Instructions
 

  • Bring the chicken stock to a boil.
  • Add the quinoa and stir the pot. Lower the heat to the smallest setting and put a lid. Cook for 15-20 minutes (your desired wetness).
  • Take off the lid, add the lime juice and cilantro. Stir and serve.

Notes

Quinoa can be stored for a few days once cooked. Just place into a sealable container and pop into the fridge.
