Chicken Caesar Wrap

This extremely simple recipe makes a great weekend lunch, or even something to bring to work. While you can get a chicken caesar wrap at most grocery stores or fast casual restaurant chains, it’s so much better to make your own. My recipe uses homemade Caesar dressing and a schmear of Laughing Cow to complement the fresh produce.

Homemade Caesar Salad Dressing

As the primary flavor of the chicken caesar wrap is Caesar dressing, I find it best to make it yourself. If you’ve only ever had store-bought, you really haven’t had Caesar. I’m not trying to be an elitist, but proper Caesar dressing does not hold long enough to be shelf stable. This is the same recipe I use in my Steakhouse Caesar Salad, so if you’ve had that, you’ll love this.

For the chicken I simply sliced a breast into strips, seasoned with a pinch of salt, and sauteed in a butter/olive oil mix until cooked. As these wraps can be eaten hot or cold, you can do the chicken first or last to suit your temperature preference.

I like to use laughing cow spreadable cheese on the inside of the wrap

I add a thick schmear of Laughing Cow cheese to the tortilla before I add any of the other ingredients. I find it to greatly complement the other ingredients, as well offer a bit of fat since chicken breast is so lean to begin with.

After spreading the cheese I add some thinly sliced onion, a couple layers of Chinese cabbage leaves, the chicken strips, fresh sliced tomato, shaved cucumber, and of course the fantastic homemade Caesar dressing. Roll it up and stick a pin in it. Your chicken caesar wrap is ready to be enjoyed.

Ingredients
  

Caesar Dressing

  • 10 oz Romaine Lettuce chopped or left whole
  • 2 Anchovies packed in oil
  • 1 tbsp Garlic minced
  • 1 tbsp Dijon Mustard
  • 1/2 tbsp Worcestershire Sauce
  • 1 Egg Yolk
  • 1/2 cup Extra Virgin Olive Oil
  • 1 tsp Lemon Juice
  • 2 tbsp White Wine Vinegar
  • 1/2 cup Parmigiano Reggiano freshly grated
  • 1 cup Croutons home made preferred
  • Black Pepper freshly cracked to taste

Everything Else

  • 1 Chicken Breast cut into strips
  • 8 leaves Chinese Cabbage or lettuce of your choice (romaine also works well)
  • 100 grams Laughing Cow Cheese
  • 2 Tortillas I used whole grain tortillas
  • 1/2 Tomato sliced
  • 1/2 Cucumber shaved
  • 1/2 Onion thinly sliced
  • 1 pinch Salt to taste
  • 1 tbsp Olive Oil
  • 1 tbsp Butter

Instructions
 

Caesar Dressing

  • In a wooden bowl add the anchovies and minced garlic. Mash into a paste using two forks, one in each hand.
  • Add the Dijon mustard and Worcestershire sauce and continue mixing into a paste.
  • Drop in the raw egg, mixing.
  • Slowly trickle in the olive oil and speed up your mixing speed. If using the forks proves difficult you can switch to a whisk which will be easier.
  • Add the lemon juice, white wine vinegar, and half of the parmesan cheese. Stir.
  • If you are using cut lettuce then toss it in along with the homemade croutons and give everything a good toss. If not, then you can just pour the dressing over the romaine leaves and then sprinkle with parmesan cheese, croutons, and freshly cracked black pepper.

Making The Wrap

  • Season the chicken strips with a pinch of salt. Place them in a medium hot skillet with the butter and olive oil and let saute until cooked, about 4 minutes.
  • Lay out your tortilla and spread the laughing cow on the lower half of each. Lay down some thinly sliced onion and then the chinese cabbage leaves. Lay down your chicken strips along with the shaved cucumber and sliced tomato. Drizzle over the homemade Caesar dressing, roll up, and serve.

Notes

These hold okay for a few days so they can be meal-prep meals. However, you should roll it in plastic wrap or foil to prevent the wrap drying out as well as from opening up and falling apart. Store in the fridge for up to 5 days.
