Cheddar Souvlaki Rolls

These cheddar souvlaki rolls are a great 3-ingredient recipe. They are perfect for afternoon treats. You can make these rolls in less than 15 minutes, and use perfectly good store-bought puff pastry.

I am a big fan of store-bought puff pastry, and thinking of different things to make with them is so much fun. From things like my SHRIMP PUFFS which are awesome hors d’ouevres to VOL-AU-VENT WITH WHITEFISH POACHED IN SHIITAKE CREAM SAUCE which are meant to impress. I understand many of my recipes are completely from scratch, but during these quarantine times sometimes I just want to make a lazy meal.

For this I used a souvlaki spice mix. I picked mine up in Greece on my last trip there, but as you can see it is clearly meant for tourists. You can easily find Greek spice mixes at your local grocery which should be quite similar. All the seasonings probably vary slightly, but as this dish isn’t particular it is completely fine.

I use 500 grams of defrosted puff pastry cut into 10 inch x 2 inch strips. This nets me about 8 rolls (which I then cut in half again after rolling up. Just use a peeler to scrape down some cheddar cheese (I actually used Red Leicester, but that’s really similar to a cheddar). Then sprinkle some of the spices over the cheese. Roll it up, cut it in half, and then place them on a silicone or parchment lined baking tray.

I bake these at 225 Celsius for 15 minutes, but you should follow the instructions on your puff pastry package. some brands are a bit different depending on the butter content and how many layers there are. As you can see my rolls were just a bit too cold so the end didn’t stick to itself, so make sure that your puff pastry is completely defrosted.

Notes

These cheddar souvlaki rolls hold great. You can even leave them out on the counter overnight and they will still be good. If you do want to store them, let them come completely to room temperature and then put them in a resealable container before putting them in the fridge.

Ingredients
  

  • 500 grams Puff Pastry fresh or defrosted
  • 100 grams Cheddar Cheese
  • 3 tbsp Souvlaki Seasoning or general Greek seasoning blend

Instructions
 

  • Unroll the puff pastry and slice it into strips 2 inches by 10 inches. That's 5 x 25 cm.
  • Use a knife or a cheese scraper to slice off pieces of cheese and lay it down on the puff pastry Sprinkle the souvlaki seasoning mix all over and then roll them up.
  • Use a knife to cut the rolls in half and then place them on a parchment or silicone lined baking tray pinched side up (when you slice the rolls in half they will be a bit pinched on the side where you cut them).
  • Place them in the oven at 220 Celsius for 15 minutes (or whatever your puff pastry package tells you, many brands have different requirements).
  • Pull out of the oven and let rest for a few minutes before serving.
