
The cafe au lait flip is a coffee oriented cocktail that is part of the flip category of cocktails. While I do call it “cafe au lait” that could be a bit of a misnomer as there isn’t actually any coffee+milk ingredients. In fact, the final drink tastes more like a mix between an eggnog and a Greek frappe. However, I used a French brandy so I wanted to give it a French name.
A lot of people are apprehensive about flips because of the use of an entire egg. To that I say “oh well.” It really is hard to convince someone that a raw egg is 99.99% of the time completely fine, and trying to convince an American is even worse. I should know, I am one. So I’ll say right now if you don’t like egg in cocktails then the cafe au lait flip cocktail is definitely not for you.
Cafe Au Lait Flip Cocktail Ingredients

Instructions
- 50 ml Brandy or Cognac. I really recommend not using anything expensive, the qualities of your $250 bottle won’t be shining through.
- 30 ml Kahlua. If you can find Kahlua Especial I would highly recommend using it, although I haven’t been able to find a bottle in about a year.
- 30 ml Heavy Cream
- 15 ml Simple Syrup
- 1 Egg
In a cocktail shaker add all the ingredients and shake well for about 15 seconds, or until everything is emulsified. Add ice and shake again to chill, then strain into a cocktail glass. Grate over some fresh nutmeg and enjoy!

- Cocktail Shaker Set
Ingredients
- 50 ml Brandy or Cognac
- 30 ml Kahlua or other coffee liqueur
- 30 ml Heavy Cream
- 15 ml Simple Syrup
- 1 Egg
- Nutmeg grated, for garnish
Instructions
- Add all ingredients to a cocktail shaker and shake hard to emulsify everything.
- Add ice and shake again to chill, then strain into a cocktail glass.
- Grate over some fresh nutmeg and serve.
