Potatoes always make excellent side dishes, and these breakfast skillet potatoes are one of my favorite recipes. There are a few signature dishes that skillet potatoes pair with, but sometimes you just want to make a whole pan’s worth and chow down.
These breakfast skillet potatoes are my go-to side dish for my absolute favorite breakfast: chicken fried steak. Seriously, I ALWAYS make them together, and when I cook for friends this recipe is a hit.
Not only is this a delicious potato recipe, it is super easy as well. There’s no par-boiling or precooking of the potatoes, so you can go start to finish in under a half hour. And you only need a few basic kitchen tools, so no fussy unitaskers! And there are so many ways to customize it to suit your tastes; I like to ladle on some of the white sausage gravy with mine.
How To Make Breakfast Skillet Potatoes
There are so many different ways to make breakfast potatoes feel free to get creative. Think of my recipe as a basic outline, then add or change spices to suit your preferences.
Ingredients
- 1 kg (2.2 pounds) Potatoes – You can use any potatoes you want here, but I prefer yellow starchy potatoes rather than waxy types.
- 1 large Yellow Onion
- 1 tsp Garlic Powder
- 1 tsp Paprika
- 1 tsp Salt
- Freshly Cracked Black Pepper – To taste
- Oil – For frying. I used sunflower oil but you can use any neutral oil you like.
Instructions
To prep the ingredients just peel and slice the potatoes and onions. That’s it – then you can start cooking. How simple is that?
I try to cut the potatoes and onions into slices around 1/2 cm or roughly a quarter inch thick. You don’t need to be super exact with it; This is diner food after all.
Get your pan up to medium high heat and add enough oil to coat the bottom and then some. When the oil is hot add the sliced potatoes and let them fry. Some people would recommend only putting down a single layer, but I toss the pan enough where all the potatoes get cooked fairly evenly.
When the potatoes soften and fry you can add in the sliced onion. The onion can cook extremely fast at this heat so I only add them when the potatoes are nearly done, just so their juice can get all over the place. Then just toss the pan around a bit so the onions get well mixed up with the sliced potatoes.
You can add the seasonings in for one final toss before moving to a chafing dish. Or you can plate these skillet potatoes with the rest of the food and sprinkle over the seasonings as you like. There’s really no wrong way to make breakfast potatoes as long as you don’t burn them to a crisp.
To reheat these breakfast skillet potatoes you can easily do so in the microwave. You can also ‘twice fry’ them by using a pan again, just know that the onions can cook a lot faster than the potatoes so they have a tendency to burn. Enjoy!

Breakfast Skillet Potatoes
Ingredients
- 1 kg Potatoes (2.2 pounds) You can use any potatoes you want here, but I prefer yellow starchy potatoes rather than waxy types.
- 1 large Yellow Onion

- 1 tsp Paprika
- 1 tsp Salt
- Freshly Cracked Black Pepper To taste

Instructions
- Peel and slice your potatoes and onions. I suggest rather thick slices, about a half cm or quarter inch thick.1 kg Potatoes, 1 large Yellow Onion
- Place your pan on medium high heat and add a glug of oil, enough to coat the bottom and then some. When hot add your potato slices.Oil
- Agitate the potatoes every so often so they flip and other potatoes can get browned. When all the potatoes are almost done, add in the onion and allow the onion to brown as well.
- Toss with the seasonings before removing to a serving dish, or plate individually and season directly.1 tsp Garlic Powder, 1 tsp Paprika, 1 tsp Salt, Freshly Cracked Black Pepper
