If it has an egg, if must be breakfast. If it’s avocado eggs, good luck buying a house before you’re 50. Joking of course. One of my favorite things to do when I can find avocado on sale (rarely as I’m in Europe) is to make avocado eggs. These simple baked dishes really only need two ingredients, avocado and eggs. The fun part though is experimenting with all the different toppings. This version uses chopped up dry cured salami and grated vintage cheddar cheese from one of my favorite cheddar companies, Wyke Farms.

The most important thing with this recipe is to use a ripe avocado. I know it seems obvious, but have to put it out there anyways. If your avocado is unripe, you won’t be able to easily remove the pit, nor make a wider hole without ruining the entire fruit.
I used a vintage chedder, which you can buy here, that has a very strong flavor. If you want to use something less pungent feel free. I would recommend a regular mature cheddar, or even some Parmigiano Reggiano.
Avocado Eggs Ingredients
1 Avocado; ripe. Each avocado will make two avocado eggs, so you can scale up this recipe in even increments to make as much as you want.
2 Eggs. As my avocados were quite small, even after cutting a larger hole, I used small eggs. If the egg is too large it may flop out and burn on the pan while you cook. You’ll want the egg to be nicely nestled inside the avocado during the baking process.
1 tbsp Cheddar Cheese; grated. Or you can substitute with whatever cheese you prefer.
1 tbsp Dry Cured Salami; chopped. If you want to go for more of a breakfast theme, you can just use regular bacon as well. I however like salami more in this dish as it really has a nice flavor when baked.
1 tsp Salt. More or less to taste.
1 tsp Fresh Cracked Black Pepper; more or less to taste.
1 tsp Paprika; for garnish.
Parsley; chopped; for garnish.
Avocado Eggs Instructions
1. Preheat your oven to 200°C or about 390°F While the ingredients list is scaled for using 1 avocado, I don’t know many people who would go through this to just make two avocado eggs, so please scale up to suit your needs. Firstly find ripe avocados and using a knife, slice off the top stem.
2. Run the knife longways around the avocado and twist to pull apart. Hack the knife into the seed and twist to remove the seed.
3. Using a teaspoon scrape the center hole a bit to make it about twice the size. You want it to be large enough to hold 1 egg yolk, but no larger. Why waste avocado.
3. In a bowl crack the egg into your fingers and let the white drain away (you can keep the white if you want, but 99% of the time I make these there isn’t enough room, plus I don’t want to scrape out too much avocado). Drop the yolk into the center of the avocado.

4. Salt and Pepper the avocado eggs, then take a pinch of the salami and sprinkle it atop the yolk. After that take the cheese and sprinkle that atop the salami.

5. Place the tray of avocado eggs into the oven and bake for 10 minutes for melted cheese but a still runny yolk, or 15 minutes for fully cooked yolk. Garnish with chopped parsley and some paprika to serve.
Notes
If the yolk breaks it will fully cook within the 10 minutes in the oven. Not a big deal as it still tastes delicious, but you definitely don’t want to cook for 15 minutes on avocado eggs with broken yolks.
