The apple walnut salad is perfect for cool summer evenings. Colorful and beautiful it packs delicious flavors and vibrant colors

Apple Walnut Salad

One of my favorite things about summer is making refreshing salads with a variety of fruits. Stonefruit is always a good choice, but so are apples. The best thing about apples is they are available year round so you can really make this salad any time you want. I pair it with my Poppy Seed Dressing, but you can even do it with a simple vinaigrette or just some olive oil and salt.

I crafted this salad with cubed Gala apples, crumbles of Dorblu blue cheese, and some quick candied walnuts. You can of course buy the candied walnuts from the store, but it only takes a few minutes to make at home so it’s well worth it. All of that is dressed with my homemade poppy seed dressing and layed on a bed of rocket (arugula).

Apple Walnut Salad Ingredients

100 grams Rocket/Arugula

2 Gala Apples; cubed

1 cup Walnuts

1/4 cup Sugar

1/4 cup water

100 grams Blue Cheese; I used German Dorblu, but I can also recommend Papillon Roquefort or a classic British Stilton.

3 tbsp Homemade Poppy Seed Dressing; or any light and tangy dressing of your choice.

Apple Walnut Salad Instructions

1. If you are making the candied walnuts yourself, do that first. In a sauce pan add the 1/4 cup of sugar and turn the heat on high. Wait about 1 minute without touching it then add the 1/4 cup of water. Let this start to bubble for another minute. Add the walnuts and toss to coat. Let this cook on high heat until the quick caramel is completely sticking to the walnuts. Turn off the heat and place on a plate to cool.

2. In a large salad bowl add the greens, cubed gala apples, and blue cheese crumbles. Toss in the now cooled candied walnuts and toss with the delightfully tangy poppy seed dressing. The apple walnut salad pairs well with a playful Aperol Spritz.
