Apple Strawberry Summer Salad With Poppy Seed Dressing

Even though it’s the middle of winter, I still like to make salads now and again to go with some hearty mains. I actually made this salad two days ago to serve alongside my Honey Lime Chicken Legs. This is a simple apple strawberry summer salad that uses one of my favorite dressings, a poppy seed vinaigrette.

The base of this salad is just baby spinach, but you can of course use whatever leafy greens you want. I use the same dressing in my apple walnut salad which uses arugula as a base, and the peppery flavor is quite complimentary.

Apple Strawberry Summer Salad Ingredients

250 grams Baby Spinach

200 grams Strawberries; fresh

1 large Apple. I used a Gala apple, but use whatever type you prefer.

50 ml Poppy Seed Dressing.

I like to peel the apple and then cut it into small pieces so that you don’t have large apple wedges falling off your fork as you try to eat. For the strawberries I just cut off the stem and then quartered them.

If you have followed my website for a while you probably know my opinions on olive oil. If not I’ve copied this directly from the poppy seed dressing recipe because I always believe that if you are not cooking with the oil, you want to get the highest quality oil you can.

Cheap olive oils will be light yellow or even clear, but this olive oil from Kabbadates is some of the highest quality I’ve ever tasted. I also recommend all the products from Theotoky Estates as it will change your mind about what good olive oil is.

As you can tell…I’m a big fan of Greek olive oils. Maybe on my next trip I’ll do an entire tour of different olive oil manufacturers across the country to write about.

  • 250 grams Baby Spinach
  • 200 grams Strawberries fresh, quartered
  • 1 large Apple peeled and sliced thin
  • 50 ml Poppy Seed Dressing


  • If you haven't made the dressing, make that first. It can store for up to a year in a cold fridge, just add a little oil and mix it up again if it starts to thicken.
  • Add the spinach and all the ingredients to a bowl and toss well with some tons or preferred utensils. Serve.
